Peanut Butter & Jelly Overnight Oats

Short on time, but a huge fan of taste? Well these peanut butter and jelly overnight oats are the ultimate quick breakfast. And before you think, jelly for breakfast, not thank you. The jelly is just raspberries. PB&J is more of an American moniker (I’m Australian) but the name is not as catchy with the word raspberry in it. Plus it ultimately looks like jelly when all mixed up and ready to eat.

Here is why I am such a fan of oats. They are a complex carbohydrate (so provide a good amount of energy to power your day), they contain soluble fibre to help keep you feeling full, and sweep up and move on out cholesterol. Because of the fibre content and their ability to keep you satiated, I find oats a great addition to the diet. So grab your spoon kids, lets dig in.

Peanut Butter & Jelly Overnight Oats

1/2 cup rolled oats
1 tsp chia seeds
1 TBS smooth peanut butter
1/4 cup frozen raspberries
1 cup milk of choice

Optional toppings
Sliced banana
1 TBS peanut butter
fresh raspberries
seed & nut mix


  1. Combine oats, chia seeds, peanut butter, raspberries and milk in a bowl.
  2. Place in the fridge overnight.
  3. In the morning, stir and top with optional toppings. Add a little more milk if you prefer a thinner consistency.
